Heat the oil in a large pot. Add the sofrito, onion and garlic. Sauté for 2-3 minutes until fragrant and well combined.
Incorporate the diced serrano ham and cook 1 minute more, stirring constantly to distribute flavors throughout the mixture.
Add the uncooked rice and stir well for 2 minutes so it gets coated in the sofrito mixture and starts to toast slightly.
Pour in the gandules and mix well. Then gradually add the hot chicken broth and season with salt and pepper to taste.
Bring to a boil, reduce heat to low, cover with a lid and cook for 20-25 minutes until rice is tender and liquid is absorbed.
Turn off heat and let rest 5 minutes without uncovering. Remove lid, fluff rice with a fork, sprinkle fresh cilantro and serve.
