Patacones are a Panamanian classic: green plantains fried twice until crispy and golden. Served as a side dish or appetizer, perfect to enjoy with tomato sauce or guacamole.

Step-by-step preparation
Cut the ends and make lengthwise cuts. Carefully remove the skin.
Divide each plantain into slices approximately 2 cm thick.
Heat oil to 160°C. Fry the slices until tender but still white, about 3-4 minutes.
Remove plantains and place each slice between two papers. Flatten firmly with a flat object until 1 cm thick.
Increase oil temperature to 180°C and fry again until golden and crispy, 2-3 minutes.
Remove onto paper towel, sprinkle with salt and serve hot.
