Pepián is a traditional Guatemalan dish with pre-Hispanic roots. It is an aromatic and flavorful stew where meat is cooked in a thick sauce made from ground pumpkin seeds and spices.

Step-by-step preparation
Cut the beef into medium chunks. Remove the seeds from the guajillo chiles. Chop the onions and garlic.
Heat the oil in a large pot and brown the beef on all sides for 8-10 minutes. Remove and set aside.
In the same pot, sauté the onion and garlic. Add the guajillo chiles and tomatoes. Cook for 5 minutes.
Blend the chiles, tomatoes, onion and garlic with some broth until smooth.
Add the blended mixture to the pot with the ground pumpkin seeds, cumin and black pepper. Mix well.
Return the beef to the pot, add the beef broth. Bring to a boil and then reduce heat to low for 30 minutes until the meat is tender.
Taste and adjust salt as needed. Serve hot accompanied with white rice and corn tortillas.
