Heat oil in a large pot and brown the beef on all sides. Remove and set aside.
In the same pot, sauté onion and garlic until transparent and fragrant.
Blend green tomatoes, cilantro, parsley, chiles and some broth. Strain and set aside.
Pour the green sauce into the pot with onion and garlic. Add beef and remaining broth.
Let simmer over low heat for 30-35 minutes until beef is tender. Season to taste.
