Clean the beef leg under cold running water, scrape the skin well and cut into medium pieces. Boil in water for 10 minutes, then discard the water to remove impurities.
In a large pot, place the cleaned leg with 2 liters of fresh water. Bring to a boil and cook over medium heat for 1 hour and 30 minutes until the meat is tender.
In a skillet, sauté the onion and garlic with a little broth from the pot for 3 minutes until they release their aromas.
Pour the soffritto into the pot. Add potatoes, carrots, salt and pepper. Cook for 20 minutes until vegetables are tender.
Taste for salt and adjust seasonings. Add fresh cilantro just before serving. The soup should have abundant broth and be nutritious.
