Step-by-step preparation

Remove ham from refrigerator 1 hour before. Make diamond-shaped incisions in the skin without reaching the meat.

Mix minced garlic, oregano, cumin, sofrito, olive oil, salt and pepper in a bowl until a paste forms.

Rub the adobo generously all over the ham surface, including incisions and under the skin.

Preheat oven to 160°C. Place ham in a roasting pan with broth at the base.

Bake for approximately 3-4 hours (about 45-50 minutes per kg). Baste with pan juices every 30 minutes.

In the last 20 minutes, increase to 200°C to brown the skin and make it crispy.

Ham should be tender and skin crispy. Rest for 15 minutes before carving.
